How to cook the perfect steak, the OBE Organic way.

 

Heat the barbecue or pan before you add the steak.

Your steak should sizzle as it makes contact with the heat, so preheat your barbecue or pan to hot. If you’re cooking a thick steak (or like your steak well done) move it to a cooler part of the barbecue or pan or lower the heat to moderate-high as it cooks.

Turn the steak once only.

Allow your steak to cook on one side until moisture appears on the surface then turn it over once only. Turning a steak more than once can result in a tough, unpalatable dish.

Learn to test your steak for doneness, then, rest your steak.

Many people have a tendency to overcook steaks. Knowing when your steak is ready to be removed from the heat is the key to enjoying a perfectly cooked beef dish. Also remember that resting the steak is just as important as cooking it. To rest your steaks, allow them to sit on a warm plate for a few minutes after removing them from the cooking heat. This will allow the delicious natural juices to properly settle; a few minutes later you will be serving and enjoying a perfect steak!

 

How to tell when your steak is ready.

 

Rare

Cook for a few minutes per side, turning once only. Cook until steak feels very soft with the back of your tongs.

Medium-rare

Cook on one side until moisture is just visible on the top surface, turning once only. Cook on the other side until surface moisture is visible. Steak is ready when it feels soft with the back of your tongs.

Medium

Cook on one side until moisture is pooling on the top surface, turning once only. Cook on the other side until moisture is visible. Steak will be cooked to medium when it feels “springy” with the back of your tongs.

Medium-well done

Cook on one side until moisture is pooling on the top surface. Turn and cook on the other side until moisture pools on top again. Reduce heat slightly and continue to cook until steak feels firm with the back of your tongs.

Well done

Cook on one side until moisture is pooling on the top surface. Turn and cook on the other side until moisture pools on top again. Reduce heat slightly and continue to cook until steak feels very firm with the back of your tongs.
