About The Highway Hotel
Meet Chris Esson, Executive Chef at The Highway Hotel. Chris learned his craft via a traineeship through school and then spent a number of years at The Belair Hotel and The Grange Hotel.
What keeps Chef Chris motivated and inspired? He says it’s all about having great employers who foster a collaborative environment, are passionate about quality and what they’re doing and who treat their staff well. Having the right fit out, quality equipment and suppliers that are also passionate about quality and service are also motivating factors. His favourite cuisine? It’s Modern Australian, because he can take the best out of each cuisine and put his own twist on it and truly make it his own.
Executive Chef Chris Esson of The Highway Hotel draws on experience from The Belair and The Grange Hotels, with a passion for Modern Australian cuisine that blends global influences. His team serves classic pub meals alongside plant-based and allergy-friendly options, ensuring something for every guest.
An OBE Organic beef slider stacked with pickles, cheese, ketchup, and mustard mayo that’s simple, juicy, and full of flavour. A bite-sized taste of the Outback that proves sometimes the classics really are the best.
Chef Chris’ favourite cut is the scotch fillet, prized for its marbling, flavour, and tenderness. Made with OBE Organic beef from the pastures of outback Australia, each steak reflects its pristine origin. Steaks are served until 8:30pm, with the kitchen closing at 9:00pm.

All steaks from The Grill are served with crushed potato, broccolini, pea purée and jus, like the OBE Organic Scotch Fillet.
OBE Organic beef is transported in an unbroken cold chain from Queensland to Adelaide, ready to be served to guests at The Highway Hotel. Certified organic by NASAA, it meets strict standards that guarantee quality and integrity from paddock to plate.
At The Highway’s Grill, every steak, including the OBE Organic Scotch Fillet, is served with crushed potato, broccolini, pea purée, and jus. The Lounge Bar opens from 11am, with bistro service from 11:30am for lunch and from 5:30pm for dinner.
