Coconut Beef Curry

Lamb marinade.

Blend.

  • 1 red onion
  • 1 flower of garlic ( more garlic )
  • Bit of ginger half inch.
  • Curry leaves about 10
  • Fresh chilli 1 or 2.
  • Bit of salt.

Marinate for at least an hour or overnight.

Next, slowly boil the marinated beef with

  • Half cup coconut milk
  • 1-inch cinnamon stick
  • 4 cloves
  • 4 to 5 cardamon’s

It takes about an hour to be tender. On medium. If water not enough can add little. Till the meat is tender. If you dont want the cinnamon stick cloves and cardomon coming into your mouth, you can remove them.

Next Slice

  • 4 to 5 red onions.
  • 1-inch cinnamon stick.
  • 3 cloves 3 cardomon.
  • Curry leaves 8 to 9.

Fry them all in oil plus ghee or butter. Till light brown. If you have a dry blender grind or tumbok the fried cinnamon cloves and cardomon with half the fried onions. ( enhance the taste ) Put the rest of the fried onions in the wok.

ADD the boiled marinated.

  • + Add the tumbok fried onion with the cinnon stick cloves and cardamon.
  • + Add 2 to 3 tablespoons of curry powder.
  • + Add 1 to 1 1/2 teaspoons of cumin powder. 1 to 2 teaspoons of coriander powder. 1 small teaspoon of garam masala. Chilli powder to taste. 1 small teaspoon.
  • + Pepper to taste.
  • + 1 tablespoon of tomato sauce. I use Heinz. Not sour.
  • + Add 3 tablespoons of yogurt.

Now on low heat, mix everything up. Stir fry till the consistency you want. Adjust the curry part with water or light coconut milk. Serve with steamed rice! Enjoy !
